Rum

Rum is a distilled spirit made from sugarcane juice or molasses, often with added spices like vanilla, cinnamon, and nutmeg. Rum aged in oak barrels can have a smooth and mellow flavor.  Rum must be 37.5% ABV or above.

Key types of rum include:
Dark Rum: Dark rum is a catchall term for rums that are deep brown or darker in colour and have been aged for longer inside the oak barrels, giving them a dark brown colour. The ageing process provides more body and robust flavours.
Gold Rum: Gold rum, also known as amber rum is lighter in coliur that dark rums usually due to being aged in barrels for much shorted periods. 
Spiced rum: Spiced rum is a type of flavoured rum made from a blend of different spices infused into the spirit, the most common being ginger, vanilla seeds, cinnamon, nutmeg, allspice, vanilla as well as other spices.
White Rum: White rum which is  also known as silver or light rum, is a type of rum that is typically aged for a short period of time, usually one year or less.  This means that there is very little colour transfer from the barrel and the rum remains clear.
Flavoured Rum: Flavoured rum is infused with a variety of flavours such as pineapple, coconut, lime, coffee and many others. The process of making flavoured rum is similar to that of spiced rum, with the addition of flavourings and sweeteners after the ageing process.
Overproof Rum:  Overproof rum is rum with a higher alcohol content,  Often used in cocktails as a small amount can add a greater alcohol kick than standard strength rum.
