The liquid is one year older than the 2023 edition and the different cask makeup highlights the distillerys progression as the last in the poplar sherry-influenced Fallow trilogy.
This whisky opens with delightful baked apple notes. On the palate, there are sweet, medjool dates, manuka honey and nutty fresh malted bread. These lead to a long finish, showing rich sandalwood oils and mixed peppercorns.
